GRILLED SALMON WITH ONION MARMalade

Salmon is such a healthy and quick meal to whip up. There are so many different ways to prepare salmon. I love this simple and super clean recipe that which is perfect for a weekday meal. I definitely recommend buying wild caught salmon for better nutritional benefits versus farm raised salmon.

It gives you all the goodness of omega 3’s, protein, vitamins, etc. from the salmon and the arugula and caramelised onions bring in the potassium, antioxidants, and other key vitamins for good regulation of your nerves, heart and digestive system.

Ingredient List:

Serves: 2

  • 2 salmon fillets, 4-6 oz each

  • 4 cups arugula

  • 1 red onion, thinly sliced

  • 1 teaspoon apple cider vinegar

  • Salt, pepper

  • 1/2 teaspoon finely chopped garlic

  • Olive oil (1 tablespoon for the marmalade) + for the salmon

  • Paprika

  • I tablespoon chopped fresh parsley

  • 1/4 lemon, juiced

Let’s Cook!

  1. Season the salmon fillets with salt, pepper, paprika and a little olive oil. Set aside.

  2. In a bowl, combine, the onions, garlic, olive oil, vinegar, salt and pepper.

  3. Place this mixture in a piece of foil and crimp it closed.

  4. Place the foil on a warmed grill pan, grill for approx 10-12 min. Set aside.

  5. On the same pan, grill the seasoned salmon fillets for about 2-3 min per side. (based on thickness of the fillets)

  6. Place the salmon fillets and onion marmalade on top of the arugula and season with lemon juice and parsley.

  7. Enjoy!
