Cajun SHrimp & SPINACH Pasta
This 5 step meal is delicious and comes together in a jiffy, no more than 20 minutes. I always keep a bag of good quality shrimp in the freezer, because its so quick to defrost and cook. A great source of protein and vitamin B12.
You can customise this and make it your own by switching up the protein or the veggies, adding more fats like olives or nuts and seeds.
Ingredient List:
Serves: 2
250-300 grams peeled and deveined shrimp
1/2 cup pasta of your choice (gluten free options available)
1 teaspoon garlic, finely chopped
1/4 yellow or white onion, cubed
1/4 red bell pepper
1/4 cup roasted corn
2 cups baby spinach
1/2 cup cream/half and half/milk of your choice
1 tablespoon butter
salt, pepper
1 teaspoon cajun seasoning
Olive oil
Let’s Cook!
Boil your pasta as per the packet instructions and set aside.
While the pasta is boiling, season the shrimp with cajun and fry in a large pan for 2-3 min per side, based on the size of your shrimp. Set aside.
In the same pan, saute garlic, onions, vegetables for 2-3 minutes.
Add in butter, cream, season with salt and pepper, bring it to a boil. Toss the shrimp back in.
Add in the spinach and stir till wilted.
You can sprinkle chilli flakes or Parmesan cheese on top as desired.
