Peri-Peri Coconut lime infused chicken breast

I love a good peri-peri chicken. It has a spice kick, which is what I enjoy and the subtle infusion of coconut and lime in this recipe is just perfect!

You don’t need a Nandos peri-peri bottle to make this. Its a simple sauce mix that you can make at home. With chicken as your main protein, be sure to pair it up with different veggies to get your daily dose of vitamins and minerals!

Ingredient List:

Serves: 2-3

  • 1 pound chicken breasts, slice to whatever thickness you like

  • Chicken seasoning blend : 1 tablespoon peri-peri powder, 1/4 cup coconut milk, 3 tablespoons lemon juice, 1 tablespoon dried cilantro

  • 2 cups cubed sweet potato

  • 1 large head of broccoli, cut into florets

  • Salt, pepper

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 3 shallots, sliced

  • Olive oil spray

Let’s Cook!

  1. Season the chicken with the chicken seasoning blend and set aside for 60 min. Make slits to the chicken breasts so that the flavours seep in. (If you don’t have the time to marinate, its okay)

  2. Season the vegetables with salt, pepper, garlic powder, paprika

  3. Preheat oven to 400 F.

  4. Place the chicken, broccoli and sweet potato on a large baking tray. Sprinkle shallots on top of the chicken.

  5. Spray with olive oil and bake.

  6. The baking time for the broccoli should be 15-20 min. Keep a check and remove when done, set aside.

  7. Let the sweet potato and chicken continue to cook in the oven. Cook time will be anywhere between 20-30 minutes. It depends on the size of the chicken breasts.

  8. Enjoy with a side of rice, or as is for a low carb meal.
