Leftover CHicken Wraps

YES! This is exactly when you need for a busy weekday when you are working from home, or running around doing a million things. I always recommend to grill an extra breast, cook extra protein when possible and use the leftovers for lunch wraps.

It’s a dump and go type of lunch. Here is the formula I want you to follow when you build your wrap. Greens + protein + veggie + healthy fats.

Ingredient List:

Serves: 2

  • 4 wraps/tortillas of your choice

  • Leftover grilled/baked chicken, cut into strips

  • 1/2 red/white onion, sliced

  • Avocado, sliced

  • Greens options- Lettuce leaves/Spinach/Arugula

  • Veggie options: Olives, capers, red peppers, mushrooms, cherry tomatoes

  • Seeds options - Hemp, pumpkin, sesame

  • Mayonnaise or chipotle mayonnaise (vegan options available)

  • Sriracha or hot sauce, as needed

Let’s Cook!

  1. Warm up the wrap on a skillet

  2. Add the lettuce or greens of your choice as the base.

  3. Place chicken strips on the lettuce. Add onions, olives and veggies of your choice.

  4. Top with avocado and seeds of your choice.

  5. Drizzle mayo and hot sauce on the top.

  6. Enjoy!
