asian inspired tofu with rice
This is a super quick tofu recipe that is sweet and spicy at the same time! The silken tofu just crumbles when you eat it and it pairs beautifully with the Asian flavours. I enjoy tofu when it’s prepared this way and its a great way to pack in plant based protein. Pair this up with any vegetables, and you have a beautifully balanced quick meal that is delicious as well!
Ingredient List:
Serves: 4
1 pack of silken tofu, 16 oz, cut into 1-inch cubes
2 cups chopped veggies such as carrots, mushrooms, zuchini, peppers, onions
1 tablespoon olive oil
1 tablespoon sesame oil
1 teaspoon chopped garlic
A handful of cilantro
Sauce ingredients: 2 cups broth/water, 1 tablespoon chilli garlic sauce, 1 tablespoon tamari, 1 teaspoon rice wine vinegar or white wine vinegar.
Let’s Cook!
Stir fry chopped veggies in olive oil + sesame oil for 3-4 minutes
Whisk all the sauce ingredients together in a separate bowl and set aside
Add tofu to the veggies and pour the sauce over it.
Let it boil for a few minutes till cooked. Garnish with cilantro and enjoy over rice.
