Roasted carrots
This is a beautiful, absolutely delicious dish as a side. It’s so easy to make and it’s hard to stop eating these once you get started! They are quite addictive!
Carrots are such a powerful vegetable with amazing benefits for our skin, eye health, cholestrol, heart, digestion and more! And when you team this up with fresh herbs, its a great anti-inflammatory dish.
Ingredient List
Serves: 4
1 pound whole carrots, multicoloured ones are great if possible!
5-6 large cloves of garlic, with the peel on
Salt, Pepper
A few sprigs of fresh thyme
2 tablespoons parsley
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
a handul of carrot tops, chopped
1 teaspoon honey
Let’s Cook!
Preheat oven to 450 F.
Place carrots on a large tray and season with salt, pepper and olive oil. Place the garlic and thyme on/around the carrots and mix.
Roast for 35-40 min in total, tossing around in between.
Topping Mixture: Mix the chopped parsley, carrot tops, lemon juice, vinegar, honey and season with salt and pepper.
Pour mixture on top of carrots after roasting
Feel free to mix up the herbs and use other like basil if you prefer, or add in some ginger for an extra anti-inflammatory boost!
