WATERMELON FETA SALAD

I haven’t met anyone till date who doesn’t enjoy watermelon. A perfect summer fruit, it’s so rich in potassium, lowers blood pressure, helps weight management and is so hydrating! That’s just a few of the amazing benefits that this fruit offers.

While watermelon is definitely the star of the show here, the vitamins, minerals, antioxidants, and anti-inflammatory benefits from the strawberries, mint and cucumber are worth mentioning for sure. It’s a beautiful pairing that comes together so well.

Ingredient List:

Serves: 2

  • 2 cups cubed seedless watermelon

  • A handful of feta, crumbled (vegan options available)

  • a handful of mint leaves, chopped

  • 5-6 strawberries, halved

  • 1 cucumber, cubed

  • Dressing: 3 tablespoons olive oil, salt, pepper, 1/2 lemon juiced

Let’s Cook!

  1. Place the cubed watermelon, cucumber, strawberries in a large bowl.

  2. Pour the dressing, mint leaves and feta on top

  3. Mix to combine well. Enjoy!

It tastes like summer :)
